Tomato Pie

The only tomato pie recipe you’ll ever need. 😍

Tomato pie is one of my absolute summer favorites! Your taste buds will dance with the flavors!

Filling Ingredients

  • 5-6 med tomatoes, sliced thin 

  • Thin-sliced onion

  • Fresh basil (be generous!)

  • Pie crust 

Filling Instructions

  1. Place tomatoes on paper towels in a single layer.

  2. Sprinkle lightly with salt and let set for 10-20 minutes to pull out some of the moisture. 

  3. Dab the tops with paper towels.

  4. Alternately layer vegetables into baked pie crust till almost full, reserving 5 pretty tomato slices (if you need a super good pie crust recipe, let me know). 

Topping Ingredients

Mix and spread over layered vegetables:

  • 1/2 c mayo

  • 1/2 c sour cream

  • 1 1/2 c cheese (I use a mix of sharp cheddar and mozzarella, but use whatever you have!) 

  • 1/3 c parmesan cheese

  • A li’l hot sauce

Topping Instructions

  1. Mix and spread over layered vegetables.

  2. Top with fresh ground black pepper and the 5 pretty tomato slices.

  3. Bake uncovered at 375° for 30 minutes.

  4. Add fresh basil to the top.

  5. Serve!

Tips

  • Don't put fresh basil on top before baking… it just gets brown and crispy. Garnish the pie when you’re ready to serve it.

  • Don't skip drying off your tomatoes a little unless you want a soggy pie.

  • Adjust the tomatoes and cheese according to taste. In my opinion, fill it as full as you can with tomatoes. We think the cheese in this recipe is plenty, and we love cheese!
